The climate "Les Lambots" with a total area of 29,099 ha, takes its name from the ancient Gallic name "Ambe" which means stream or river, which are present in this place in quantity.

The appellation
Located between Beaune and Volnay, Pommard has a wealth of 320 hectares spread over the two slopes of a valley with a south, south-east exposure very favorable to the development of the vines.
Our small plot of 0.21ha, located on the eastern slope of the hillside, faces our second plot of Pommard "Les Petits Noizons". Established since 1953 on its clay-limestone soil typical of the Côte d´Or, this plot offers us a wine of great elegance with its frank and fruity mouth.

Situation: when leaving Beaune heading south, Pommard is the first village encountered, just before Volnay. At 365 meters above sea level, Les Lambots is located on the Volnaysian side of the appellation.
Grape variety: 100% Pinot Noir
Soil and subsoil: clay-limestone soil
Planting density: 10,000 vines / ha

The wine
Date of harvest: August 27th 2020 (leaf day).
Sorting in the vineyard and on reception in the winery.
Yield: 16.5 hl / ha
Whole harvest 100%, not crushed and vatted by gravity.
Without yeast or enzymage.
Cold pre-fermentation maceration (12-15 ° C) for 5 days.
Duration of vatting: 17 days a light pumping-over per day until the end of vatting.
Pressing with the vertical press.
Aging: 15 months and 1 month in stainless steel vats
Percentage of new barrels: 0%
Gentle and slow heating.
Origin of the woods: Cîteaux and Tronçais
Racking of all barrels.
No sticking, light filtration.
December 6th, 2021 (fruit day).
Limited to 443 bottles.
