The climate "Les Lambots" with a total area of 29,099 ha, takes its name from the ancient Gallic name "Ambe" which means stream or river, which are present in this place in quantity.

The appellation
Located between Beaune and Volnay, Pommard has a wealth of 320 hectares spread over the two slopes of a valley with a south, south-east exposure very favorable to the development of the vines.
Our small plot of 0.21ha, located on the eastern slope of the hillside, faces our second plot of Pommard "Les Petits Noizons". Established since 1953 on its clay-limestone soil typical of the Côte d´Or, this plot offers us a wine of great elegance with its frank and fruity mouth.

Situation: when leaving Beaune heading south, Pommard is the first village encountered, just before Volnay. At 365 meters above sea level, Les Lambots is located on the Volnaysian side of the appellation.

The wine
Harvest date: September 28th 2021 (flower day).
Selection: hand-sorted in the vinyard and on arrival in the winery.
Yield: 10.3 hl/ha
No yeast addition.
Maceration: pre-fermentation, cold (12-15°C) for 5 days.
Vatting-time: 20 days.
a light pumping-over per day until the end of vatting time.
Pressing with the new vertical press.
Length: 16 months
Type: in oak barrels.
Percentage of new barrels: 20 %
Toasting: long and gentle heat, without charring.
Source of wood: Cîteaux
Light and soft filtration. No fining.
